Grown in the centenary orchards at the foothills of the Atlas Mountains of the Marrakech region in Morocco, the olives used to produce ATLAS Extra Virgin Olive Oil are harvested directly from trees at the optimal maturity stage without any contact with soil and its impurities. The time period between harvest and crushing does not exceed 20 minutes, thus conserving all the polyphenols in the olives and giving the extra virgin olive oil a very low degree of acidity (maximum 0.2°) as well as the highest nutritional values.
